Smaller recipe: Halve all measurements to prepare 1 sheet pan for 4 servings.

Old Bay substitute: If Old Bay is unavailable, here’s a homemade version. Alternatively, use 1 teaspoon paprika and ½ teaspoon celery salt.

Storage: After roasting, allow the vegetables to cool completely and then place them in the refrigerator, where they will last for 4 to 5 days.

Reheating: Heat in a 350°F oven for approximately 10 minutes. You can also warm them in a skillet over medium heat with a small drizzle of olive oil, or use your air fryer for a few minutes to regain crispiness.

Make-ahead tip: Chop all the vegetables up to 24 hours prior and keep them in the refrigerator in a large bowl or container. Avoid mixing them with olive oil and seasonings until just before roasting.
