    We’ve been avid fans of black eyed peas ever since we developed our Smoky Instant Pot Black Eyed Peas recipe. So when we noticed our incredibly inventive friend Todd (@turnipvegan) made a Curry Black-Eyed Pea Bowl recipe, we knew we had to give it a shot! And it certainly did not let us down.

    After some adjustments, we arrived at our inspired, brothier, 1-pot version, which features more of an Indian-inspired flavor profile! Shall we show you how it’s done?

    #### How to Prepare Curried Black Eyed Pea Soup

    This SIMPLE, creamy black eyed pea soup begins with sautéing onion, sweet potato, and red bell pepper, which establishes a naturally sweet foundation. Then, we incorporate minced garlic, grated ginger, a generous dose of our favorite homemade curry powder, and red pepper flakes for a bit of spice. Don’t forget the salt, too, and you’ve got the base of a seriously tasty soup!

    Next, we elevate the flavor with coconut aminos and mix in vegetable broth along with coconut milk, which adds creaminess without being as heavy as a curry. Just a creamy, comforting soup!

    After that, it’s time to incorporate the black eyed peas. One of the great things about black eyed peas is that you can cook them from dried quite quickly, no soaking needed! Of course, if time allows, feel free to soak them (just use a little less broth and anticipate a shorter cook time). Another option to speed things up: Use drained and rinsed canned black eyed peas!

    After simmering until your black eyed peas are tender and the flavor of the broth has developed, your soup is ready for the finishing touches: chopped kale for a splash of green vitality and freshly squeezed lime juice for a zesty kick.
