So when I saw a recent Instagram reel from @costcohotfinds featuring a brand new marshmallow cookie and a short but telling caption — New! These cookies are absolute perfection! — I took note. There were hundreds of comments, mostly positive (“must try,” “they’re amazing,” “the best”) with a few dissenters (“a 5/10” and “not good”). I texted my sister (who was low on her favorite frozen chicken nuggets) and told her we’d be heading to the bulk warehouse to pick up a clamshell to try them for ourselves. Here’s how it went.

What You Should Know About Kirkland Signature Marshmallow Crispy Cookie

The new Marshmallow Crispy Cookies look like a cross between a brown butter sugar cookie and a warm Rice Krispies Treat. The caramel-colored cookie is studded with melted marshmallows, and contains an admittedly long list of ingredients. (Bleached enriched flour, sugar, shortening, crisp rice, and marshmallows are the top five — not a single chocolate chip in sight.)

The cookies started showing up in the store’s bakery section earlier this month, though some commenters hadn’t spotted them in their warehouse just yet (as of last week). They are sold in 24-pack clamshells for $9.99. That’s standard pricing for Kirkland Signature cookies, and breaks down to roughly 42 cents per cookie for the math nerds, like me, out there.

My Honest Review of Kirkland Signature Marshmallow Crispy Cookie

My sister and I didn’t even wait until we were out of the parking lot before popping open that clamshell. Once we did, the car immediately smelled caramel-y, like brown butter. I picked one up to examine it more closely and admired the distinctly different marshmallow pattern throughout. These cookies could easily pass for homemade if you fanned them out on a tray.

I broke one in half for us to split as my three-week old nephew napped in the back. We each took a bite, and after a moment of silence we practically “oohed” in unison. It’s sweet (maybe a little too sweet), with a wonderful toasty caramelized flavor thanks to the brown butter and crisp rice.

When combined with the marshmallows, which are melty and gooey, it reminds me of a pot of still-warm Rice Krispies Treats — you know, the bit you eat off the spatula after transferring them to the pan. Except the texture is more tender; it’s more chewy than crispy, and not at all crumbly. In fact, the name Marshmallow Crispy Cookie is a little deceiving.

We arrived at my parents’ home and shared them with more guinea pigs. Even my partner who just called them “good” had three that evening. If I drank coffee, I’d have dipped one straight into my mug the following morning. We’re hosting a family reunion next month, and if these are still at our local Costco, I may pick them up to make two-ingredient ice cream sandwiches.
