### Thrilling Life Transitions and a Tasty Cake Recipe

As we step into a new phase of our lives, we wanted to provide some important updates before we get into the scrumptious cake recipe you’re eager to learn about. After spending 12 amazing years in Sweden, our family is relocating to Denmark! This change comes as Luise follows her lifelong aspiration of becoming a midwife, with her studies occurring in Copenhagen. We are both excited and grateful for the upcoming changes, especially as we get our children ready for a new school and life in a foreign country.

#### Our Relocation to Denmark

The choice to move has been a topic of conversation within our family, particularly considering our dual-nationality heritage. We have chosen a charming little house just outside of Copenhagen, which will allow us to be nearer to family, especially their grandmother. The kids are thrilled about the move, particularly with the idea of having a trampoline in the yard, but they are also dealing with the adjustments that come with changing locations and starting at a new school. #### Continuing Our Journey with Green Kitchen Stories

Despite the significant changes, we will maintain our work with Green Kitchen Stories. Luise will be juggling her studies alongside our ongoing projects. We have some thrilling plans coming up, including a new series of vegetable tattoos and the creation of our production company, Green Kitchen Studios. Furthermore, we are excited to share that we are working on a new book expected to debut next Spring, although we are keeping the title a surprise for now.

#### The Cake Recipe

Now, let’s move on to the true highlight of the day: the cake! This delightful dessert is based on a polenta cake from our book, *Green Kitchen Travels*, but we’ve made some changes to improve its moistness and transformed it into an upside-down cake featuring lovely lemon slices and a rich lemon honey syrup.

This cake perfectly blends an Italian cheesecake and a tender crumb cake, with hints of polenta and poppy seeds. It is magically moist without being dense, naturally gluten-free, and sweetened solely with honey, which imparts delightful floral notes. The addition of ricotta cheese enhances the flavor, making it even more delectable after a day in the refrigerator.
