Zesty and warm with notes of cinnamon and star anise and plenty of sweet flavor, this homemade apple cider is the perfect way to use up those apples you picked. How to Make Homemade Apple Cider

  1. Combine ingredients. Bring apples, oranges, sugar, spices, and water to a boil.
  2. Simmer. Simmer for three hours, mashing the fruit every 30 minutes. 
  3. Strain and finish. Strain the cider through a cheese cloth-lined strainer to remove any solids. Adding lemon at the end is optional, but it provides a nice brightness and contrast to the warmly spiced cider. Serve warm or chilled.

  • An equal amount of another sweetener, such as brown sugar, maple syrup, or honey, can be used instead of granulated sugar.
  • Experiment with your favorite warming spices, such as nutmeg, cloves, ginger, and allspice to find a blend of spices that’s just right for you.

Storage and Make-Ahead Tips 

  • Refrigerate in an airtight container for up to 7 days, or freeze for up to 3 months.  Thaw frozen cider in the refrigerator for several hours or overnight.
  • Apple cider can be reheated on the stovetop or in the microwave. Pour into a saucepan and heat over medium until it reaches your desired temperature, or heat in the microwave in a microwave-safe mug for about 2 minutes.

  • 3 pounds

    any combination of sweet and tart apples (6 medium)

  • 2

    medium oranges

  • 3 quarts

    water (12 cups)

  • 1 cup

    granulated sugar

  • 4 (about 3-inch)

    cinnamon sticks, or 1 tablespoon ground cinnamon

  • 4

    whole star anise

  • 1 teaspoon

    whole cloves

  • Cheesecloth

  • Lemon juice

Instructions

  1. Core and quarter 3 pounds apples; transfer to a large pot. Cut the peel from 2 medium oranges: Trim a thin slice from the top and bottom of each orange. Place the orange on a cut side and, starting from the top and cutting down toward the bottom while following the curve of the orange, cut the peel and white pith off. Add the flesh of the oranges to the pot.

  2. Stir in 3 quarts water, 1 cup granulated sugar, 4 (about 3-inch) cinnamon sticks, 4 whole star anise, and 1 teaspoon whole cloves.

  3. Bring to a boil over high heat. Reduce the heat to maintain a simmer. Simmer uncovered for 4 hours, stirring and mashing the softened fruit with a potato masher, wooden spoon, or tongs every 30 minutes or so. Meanwhile, line a large fine-mesh strainer with a double layer of cheesecloth and fit over a large heatproof bowl.

  4. Turn off the heat. Give the fruit one final mash. Pour through the strainer and let sit until the stream of liquid slows, 5 to 7 minutes. Press on the solids with a spoon to release more liquid. Discard the solids.

  5. Taste the apple cider and stir in lemon juice a teaspoon at a time as needed. Serve warm or chilled.
