Something about the fall weather makes me really want to spend my weekend mornings with a stack of fluffy pancakes. I typically cook them on my favorite nonstick pan, but recently I’d been really wanting to treat myself to a big griddle. It’s way easier to make multiple pancakes at once on a griddle, as it has plenty of space for flipping. 

I’ve been a fan of HexClad since I tried its Hybrid Fry Pan earlier this year (perfect for scrambled eggs!). So when I saw that the brand has a double burner griddle, I knew I had to try it out. Now I can safely say I will be retiring my nonstick pan from its pancake duties.

At just over five pounds, the sleek griddle easily fits across two stovetop burners (as the name implies), and is simple to season (lightly coat the griddle with cooking oil over medium-low heat for a few minutes, and then it’s good to go). It’s oven-safe up to a staggering 900°F (!), and dishwasher-safe, too.

My Honest Review of HexClad’s Hybrid Double Burner Griddle

After seasoning the griddle, I moved straight into making pancakes. For my own curiosity, I decided to butter one side of the griddle and leave the other side ungreased. Ultimately, the pancakes on both sides came out beautifully golden without sticking to the griddle at all. The ones on the buttered side did end up having a slightly crispier exterior — which I love — but I would happily eat either stack. 

I used this absolutely delicious mochi pancake mix to make mine (seriously, they’re so good, you don’t even need maple syrup). Once I got comfortable, I easily cooked four pancakes at a time that were about the size of my hand (for the first round, I only made two just to get a feel for the griddle). I have an electric stove with burners that sit slightly wonky, so I was surprised to find that the griddle was able to evenly disperse the heat so the center of the pan cooked the pancakes perfectly every time. 

That’s a big deal for me. Usually when I make pancakes, I expect the later rounds to get dark — bordering on burning — quicker than the earlier rounds. So I was delighted to find that this griddle never got too hot. Every batch of pancakes turned out beautifully — even the very first one. I can’t wait to make some crispy smashburgers next.
