What Makes Oven-Baked Skillet Pancake So Good
If you’ve got a brunch party planned, then this is the dish for you. With just a few ingredients and a little bit of time, this recipe delivers the most delicious, fluffiest pancake to serve a crowd.
This isn’t your average pancake, either. It’s got a lot of height to it, and because it’s cooked in a nonstick skillet the texture is reminiscent of cornbread with golden-brown, crusty edges. It’s jam-packed with juicy blueberries, and it isn’t overly sweet (so a generous drizzle of maple syrup is welcome here). I’ll definitely be making this for friends on our next weekend upstate.

How to Make Oven-Baked Skillet Pancake
- Heat the skillet. Place a nonstick skillet into a 375°F oven and let it heat while you prepare the batter.
- Whisk the dry ingredients. Mix together flour, sugar, baking powder, baking soda, and kosher salt.
- Mix the wet ingredients. Melt the butter and mix it with buttermilk and egg yolks.
- Mix and rest the batter. Add the wet mixture to the dry ingredients and whisk together until fully combined. Fold in the egg whites and allow the batter to rest for 10 minutes.
- Bake. Add some melted butter to the heated skillet. Pour the batter in the pan, add the blueberries, and let it bake for 25 to 30 minutes. Remove, drizzle with maple syrup, and enjoy!
