# A Plant-Based Variation of Caesar Salad: The Shroom Salad

As summer gives way to autumn, many of us start craving hearty, comforting dishes. This year, we’re thrilled to present a new interpretation of a timeless classic: the Caesar salad. However, this rendition is unlike any ordinary Caesar salad; it’s a vegan invention that showcases the deep, umami profiles of mushrooms while retaining the spirit of the cherished original.

## The Inspiration Behind the Dish

The concept for this vegan Caesar salad came to life during a recent cookalong on Instagram, where I (David) demonstrated an innovative technique for cooking mushrooms. After a bustling summer that included a major move to Denmark, we’re eager to share this recipe with you. The transition has been a whirlwind, but we’re getting settled, and the kids are adjusting well to their new schools. ## The Star Ingredient: Mushrooms

The true highlight of this dish is the mushrooms. I discovered an incredible method for searing mushrooms that enhances their texture and flavor. By pressing the mushrooms between two pans over medium-high heat, they release their juices and form a crispy outer layer. This technique, credited to chef Derek Sarno, yields mushrooms that are both juicy and crunchy, resembling chicken—a comparison I make lightly, as I haven’t consumed meat in over 25 years.

### The Searing Technique

1. **Preparation**: Begin with fresh, firm mushrooms—shiitake, portobello, or cremini are excellent choices. Gently clean them with a damp cloth and slice if you prefer.

2. **Searing**: Heat two pans over medium-high heat. Place the mushrooms in one pan and press down with the second pan. This approach helps the mushrooms expel moisture while achieving a wonderful crunch.

3. **Marinating**: After searing, take the mushrooms off the heat and let them bathe in a marinade of your choice. A straightforward combination of olive oil, garlic, and herbs can greatly enhance their flavor.

## The Vegan Caesar Dressing

To stay true to the essence of a traditional Caesar salad, we’ve created a straightforward yet tasty vegan dressing. This dressing is both creamy and tangy, made with:
