

Candy Cane White Chocolate Chip Blondies

Delicious cookie bars that boast a crispy base and edges while remaining soft and chewy within, loaded with an abundance of white chocolate chips and crunchy bits of peppermint candy canes!
Ingredients
- 1 cup of butter, melted and allowed to cool
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract (optional)
- 2 cups all-purpose flour (substitute with gluten-free for a gluten-free version)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup crushed candy canes
- 1 cup white chocolate chips
Directions
- In a large bowl, combine the melted butter, granulated sugar, and brown sugar, then incorporate the eggs and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually fold the dry ingredients into the wet ingredients.
- Add the white chocolate chips and crushed candy canes into the batter and stir to combine.
- Pour the batter into a greased (or parchment paper lined or foil lined) 13×8 inch baking dish and bake in a preheated 350F/180C oven until a knife inserted into the center comes out clean, approximately 18-22 minutes.
- Allow to cool, cut into pieces, and enjoy!
Option: Incorporate 1/4 teaspoon peppermint extract along with the vanilla extract.
Option: Swap the white chocolate chips for milk chocolate chips or dark chocolate chips.
