Candy Cane White Chocolate Chip Blondies

Delicious cookie bars that boast a crispy base and edges while remaining soft and chewy within, loaded with an abundance of white chocolate chips and crunchy bits of peppermint candy canes!

Ingredients
  • 1 cup of butter, melted and allowed to cool
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract (optional)
  • 2 cups all-purpose flour (substitute with gluten-free for a gluten-free version)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup crushed candy canes
  • 1 cup white chocolate chips
Directions
  1. In a large bowl, combine the melted butter, granulated sugar, and brown sugar, then incorporate the eggs and vanilla extract.
  2. In a separate bowl, whisk together the flour, baking powder, and salt.
  3. Gradually fold the dry ingredients into the wet ingredients.
  4. Add the white chocolate chips and crushed candy canes into the batter and stir to combine.
  5. Pour the batter into a greased (or parchment paper lined or foil lined) 13×8 inch baking dish and bake in a preheated 350F/180C oven until a knife inserted into the center comes out clean, approximately 18-22 minutes.
  6. Allow to cool, cut into pieces, and enjoy!

Option: Incorporate 1/4 teaspoon peppermint extract along with the vanilla extract.

Option: Swap the white chocolate chips for milk chocolate chips or dark chocolate chips.
