Cornbread Prepared Without Gluten

Cornbread Prepared Without Gluten

**Gluten-Free Cornbread Recipe**

This cornbread recipe is gluten-free because of almond flour! It’s truly tasty with a hint of sweetness, crispy edges, and a strong corn flavor. The recipe produces up to 16 generous slices.

**Ingredients:**
– Cornmeal
– Almond flour
– Salt
– Baking powder
– Baking soda
– Eggs
– Maple syrup
– Milk
– Butter

**Instructions:**
1. Preheat the oven to 375 degrees Fahrenheit. In a large bowl, mix together the cornmeal, almond flour, salt, baking powder, and baking soda. Stir to combine, then set aside. In a medium bowl, whisk the eggs and maple syrup until well combined. Add the milk and whisk until smooth.
2. Pour the wet ingredients into the dry ingredients, and stir just until moistened. Set aside while you melt the butter.
3. Put the butter in a large (12-inch) cast iron skillet. Place the skillet in the oven to melt the butter, which should take about 5 to 13 minutes.
4. Once the butter is melted and golden, carefully remove the skillet from the oven using oven mitts, and give it a gentle swirl to coat the sides lightly about an inch up.
5. Add the melted butter to the batter and stir just until mixed. Pour the batter back into the hot skillet, using a spatula to scrape all of the batter from the bowl into the skillet.
6. Carefully return the skillet to the oven and bake until the cornbread is browned around the edges, springy to the touch, and a toothpick inserted in the center comes out clean with only a few crumbs, about 25 to 30 minutes. Gently place the skillet on a cooling rack. Allow it to cool for at least 5 minutes before slicing and enjoying.

**Notes:**
– Recipe adapted from Honey Butter Cornbread.
– Cornmeal suggestions: Bob’s Red Mill’s medium-grind cornmeal is recommended.
– Temperature note: Warm the eggs in a bowl of warm water while melting the butter. Briefly warm the milk in the microwave.
– Milk options: Any plain, unsweetened milk is suitable—consider using cow’s milk, plain almond milk, cashew milk, or oat milk.
