**Cooking Time**: 30 minutes
**Overall Time**: 45 minutes
**Yield**: 6 servings

**Ingredients**
– 1 tablespoon oil
– 1 pound ground turkey (alternative options: chicken, pork, or beef)
– 1 cup onion, chopped
– 1 cup carrot, chopped
– 1 cup red bell pepper, chopped
– 1 tablespoon garlic, minced/grated
– 1 tablespoon ginger, minced/grated
– 1 tablespoon curry powder
– 1 (14 ounce) can coconut milk
– 1 (15 ounce) can diced tomatoes
– 1 cup pumpkin puree
– 2 cups pumpkin, diced (or butternut squash or sweet potato)
– 1 tablespoon lime juice
– 1 tablespoon soy sauce (or fish sauce)
– 1 tablespoon maple syrup (or coconut sugar, palm sugar, brown sugar)
– 1 cup peas (optional)

**Instructions**
1. In a large saucepan, heat the oil over medium-high heat, add turkey, onion, carrot, and bell pepper, cooking until the turkey is fully cooked, approximately 10 minutes, breaking it up as it cooks.
2. Incorporate the garlic, ginger, and curry powder, mixing and cooking for one minute.
3. Pour in the coconut milk, tomatoes, pumpkin puree, pumpkin cubes, lime juice, soy sauce, and maple syrup, bringing to a boil before reducing the heat and simmering until the pumpkin cubes are soft, around 15-20 minutes.
4. Stir in the peas and allow them to heat through, about 3 minutes, then serve!

**Note**: At the end, adjust flavor by tasting for the right blend of sweet, spicy, salty, and sour, modifying with maple syrup, chili sauce, soy sauce, and lime juice as needed.
**Alternative**: Include 2 tablespoons tomato paste with the garlic.
**Alternative**: Mix in 2 tablespoons peanut butter with the pumpkin puree.
**Alternative**: Add 1/2 cup applesauce/puree together with the pumpkin puree.
**Alternative**: Stir in 1/4 cup dried cranberries with the butternut squash.
**Alternative**: Sprinkle 2 tablespoons chopped cilantro at the finish.
**Alternative**: Include 2 tablespoons pepitas at the end.
