This coconut martini is rich and tropical, concocted in just minutes with vodka, lime juice, and cream of coconut. Finish it off with a crunchy toasted coconut rim!
There’s something about the tropical creaminess of coconut that makes it ideal for cocktails. While it’s famously used in the classic piña colada, I have a more distinctive take that I believe you’ll enjoy: try my coconut martini!
Modeled after my well-loved coconut margarita (yum!), this version incorporates vodka instead of tequila and oh, is it delicious! It’s refreshing and creamy, sweetly tart with a tropical fruit essence and a crunchy toasted coconut rim.
What’s Included in a Coconut Martini?
A coconut martini is a vodka-based beverage featuring cream of coconut that imparts tropical sweetness to the cocktail. Naturally, a “martini” in the traditional sense (the dry martini with gin and dry vermouth) is a completely different drink. A vodka martini serves as a foundation for various flavors, including watermelon, chocolate, coffee, or raspberry.
There are two vodka martinis that are officially recognized by the International Bartender’s Association IBA: the lemon drop martini and espresso martini. Any other vodka martinis are left to the bartender’s creativity. So here’s my take on a coconut martini:
– Vodka: Opt for something clear and mid-range; I prefer Tito’s
– Fresh lime juice: Always opt for a fresh lime to impart a citrus brightness (not from a bottle)
– Cream of coconut: The true star of this drink
How to Prepare a Coconut Martini
Have the essential ingredients? Let’s craft this coconut martini! Here are the simple steps:
1. Create the coconut rim. Toast the coconut in a pan, keeping a close watch as it can burn quickly! Then spread it out on a plate. Dip the rim of the glass in extra cream of coconut (this acts as the adhesive), followed by the toasted coconut.
2. Shake: Combine 2 oz vodka, ½ oz fresh lime juice, and 1 oz cream of coconut in a cocktail shaker. Toss in 2 handfuls of ice and shake until chilled. Don’t have a cocktail shaker? A mason jar with a lid will work.
3. Strain: Pour into a martini glass. That’s all!
Key Ingredient: Cream of Coconut
The most crucial tip for concocting a coconut martini: utilize cream of coconut! Steer clear of coconut cream, which is unsweetened and not designed for cocktails. Here’s what you should know about this element:
– Cream of coconut is a sweetened syrup made for cocktails, crafted from coconut cream and sugar. It comes in squeeze bottles for easy addition to drinks.
– Coconut cream is unsweetened. It’s thick, has a robust coconut taste, and is available in cans next to coconut milk. Coconut cream is produced by chilling coconut milk and skimming off the layer of cream that rises to the top. It’s not intended for this beverage.
Tip: Use any leftovers in popular coconut cocktails like the Piña Colada, Painkiller, Chi Chi, Bushwacker, or my personal favorite, Coconut Margarita!
When to Serve It
The coconut martini recipe is festive and fun, with a subtly tropical, creamy flavor. Serve it for:
– Happy hour with friends
– Girls’ or guys’ night
– Cocktail hour at a dinner gathering
– Signature drink at a summer bash
– Dessert cocktail when you crave something sweet yet light

Can I create a coconut martini without vodka?
The flavor combination also pairs nicely with light rum as a substitute for something more tropical. The structural recipe remains the same. Alternatively, you could opt for Malibu coconut rum!
