Delicious Chicken Picadillo Recipe

Experience all the tastes of a Cuban picadillo enhanced with capers, olives, and raisins, featuring chicken!

A Cuban picadillo is a culinary creation that generally combines ground beef, bell peppers, onions, garlic, oregano, cumin, bay leaf, tomato sauce, olives, capers, and raisins. In this adaptation, sliced chicken replaces the ground beef. Picadillo can be prepared in under 30 minutes, giving ample time to cook some rice, and it’s overflowing with flavour!

ingredients
  • 1 tablespoon olive oil
  • 1 pound chicken (sliced or ground)
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, chopped
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 1 (15 ounce) can crushed tomatoes
  • 1/2 cup pimento stuffed olives, sliced
  • 1/4 cup raisins
  • 1 tablespoon capers
  • 1 tablespoon Worcestershire sauce (optional)
  • 1 tablespoon soy sauce (optional)
  • 1 tablespoon apple cider vinegar
  • salt and pepper to taste
directions
  1. Sauté the chicken, onions, and bell pepper in a large skillet over medium-high heat.
  2. Incorporate the garlic, paprika, oregano, cumin, salt, and pepper, cooking until aromatic, around one minute.
  3. Stir in the tomatoes, olives, raisins, and capers, allowing it to reach a boil, then reduce the heat and simmer for 5 minutes.
  4. Mix in the Worcestershire sauce, vinegar, and fish sauce, before seasoning with salt and pepper as desired and enjoying!

Note: In the photographs, I use 1/2 yellow bell pepper and 1/2 red bell pepper.
