Quinoa Salad with Roasted Red Peppers and Feta

A salad featuring quinoa, roasted red peppers, chickpeas, and feta dressed in a balsamic vinaigrette!

  1. In a medium saucepan, heat the oil over medium heat, then add the onions and sauté until soft, approximately 8-10 minutes.
  2. Stir in the garlic and cook until aromatic, around one minute.
  3. Mix in the quinoa and broth, bring to a boil, then lower the heat and cover, simmering for 15 minutes before turning off the heat and allowing it to rest, covered, for 5 minutes.
  4. Incorporate the roasted red peppers, chickpeas, feta, green onions, and balsamic vinegar, stir well and enjoy!

Option: Swap feta for chevre/goat cheese.
Option: Substitute roasted red peppers with sliced sun-dried tomatoes.
