Experience all the tastes of a grinder sandwich in a rich pasta salad!

ingredients
    For the salad:
  • 1 pound pasta (use gluten-free for gluten-free)
  • 2 cups lettuce, either shredded or sliced
  • 1 cup tomato, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup pepperoncini, thinly sliced
  • 1/2 cup provolone, diced
  • 1/2 cup salami, diced
  • 1/2 cup pepperoni, diced
  • For the dressing:
  • 1/3 cup mayonnaise
  • 1 tablespoon red wine vinegar
  • 1 teaspoon oregano (or Italian seasoning (link))
  • 1 small clove garlic, minced or grated
  • 2 tablespoons parmigiano reggiano (parmesan), grated
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
directions
  1. Prepare the pasta according to the package instructions, then drain and rinse under cold water until cooled.
  2. Mix together the salad, combine with the dressing and enjoy!
