Ingredients
- 1 pound skinless, boneless chicken breasts or thighs, chopped into bite-sized pieces
- 2 tablespoons mayonnaise (or substitute with oil)

- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika

- 2 cups romaine lettuce, finely sliced
- 1/4 cup caesar dressing
- 2 tablespoons grated or shaved parmigiano reggiano (parmesan cheese)
- 1/2 cup crumbled croutons
- 4 buns or 8 slices of bread (gluten-free for those avoiding gluten)
- 2 ounces pepperoni
Instructions
- Marinate the chicken in the blend of mayo, garlic, salt, pepper, paprika, and cayenne, covered, in the refrigerator for 20 minutes to overnight.
- Cook the chicken in a skillet over medium heat until thoroughly cooked, approximately 10-15 minutes.
- Combine the lettuce, dressing, parmesan, and croutons.
- Assemble the sandwich with pepperoni, chicken, and caesar salad, then enjoy!
