Ingredients
  • 1 pound skinless, boneless chicken breasts or thighs, chopped into bite-sized pieces
  • 2 tablespoons mayonnaise (or substitute with oil)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 2 cups romaine lettuce, finely sliced

  • 2 tablespoons grated or shaved parmigiano reggiano (parmesan cheese)
  • 1/2 cup crumbled croutons
  • 4 buns or 8 slices of bread (gluten-free for those avoiding gluten)
  • 2 ounces pepperoni
Instructions
  1. Marinate the chicken in the blend of mayo, garlic, salt, pepper, paprika, and cayenne, covered, in the refrigerator for 20 minutes to overnight.
  2. Cook the chicken in a skillet over medium heat until thoroughly cooked, approximately 10-15 minutes.
  3. Combine the lettuce, dressing, parmesan, and croutons.
  4. Assemble the sandwich with pepperoni, chicken, and caesar salad, then enjoy!
