
Zucchini in Garlic Butter

Zucchini prepared like garlic bread; baked and drenched in butter and garlic!
ingredients
- 2 medium zucchinis, halved lengthwise
- 1 tablespoon of olive oil
- salt and pepper to taste
- 2 tablespoons of softened butter
- 2 cloves of garlic, minced or grated
- 1 tablespoon of chopped parsley
- 1/2 teaspoon of lemon zest (optional)
- 1 tablespoon of grated parmesan cheese (parmigiano reggiano)
directions
- Coat the zucchini on all sides with olive oil, season with salt and pepper, and arrange cut side down on a baking sheet.
- Bake in a preheated oven at 450F/230C on the lower rack for 10 minutes.
- Move to the top rack and broil for an additional 10 minutes.
- In the meantime, combine the butter, garlic, parsley, and lemon zest.
- Turn the zucchini over, apply the butter mixture, sprinkle with parmesan, and enjoy!
Option: To soften the garlic flavor: In a small saucepan, melt the butter, add garlic, and cook until aromatic, about 30 seconds, then mix in the parsley and lemon zest before spreading it on the zucchini.
Option: Grill the zucchini instead!
