Zucchini in Garlic Butter

Zucchini prepared like garlic bread; baked and drenched in butter and garlic!

ingredients
  • 2 medium zucchinis, halved lengthwise
  • 1 tablespoon of olive oil
  • salt and pepper to taste
  • 2 tablespoons of softened butter
  • 2 cloves of garlic, minced or grated
  • 1 tablespoon of chopped parsley
  • 1/2 teaspoon of lemon zest (optional)
  • 1 tablespoon of grated parmesan cheese (parmigiano reggiano)
directions
  1. Coat the zucchini on all sides with olive oil, season with salt and pepper, and arrange cut side down on a baking sheet.
  2. Bake in a preheated oven at 450F/230C on the lower rack for 10 minutes.
  3. Move to the top rack and broil for an additional 10 minutes.
  4. In the meantime, combine the butter, garlic, parsley, and lemon zest.
  5. Turn the zucchini over, apply the butter mixture, sprinkle with parmesan, and enjoy!

Option: To soften the garlic flavor: In a small saucepan, melt the butter, add garlic, and cook until aromatic, about 30 seconds, then mix in the parsley and lemon zest before spreading it on the zucchini.
Option: Grill the zucchini instead!
