
### Thrilling Life Transitions and a Yummy Cake Recipe
As we step into a new phase of our lives, we are excited to reveal some important news to you. After 12 amazing years in Sweden, we are relocating to Denmark! This move comes as Luise has followed her lifelong aspiration of becoming a midwife, enrolling in a midwifery school situated in Copenhagen. Our family will be settling in a lovely house just outside the city, and while we are eager about this change, we also experience a blend of anxiety and gratitude regarding the transformations ahead for us and our kids.
#### The Shift to Denmark
The debate on where to settle has always been prevalent in our multicultural family. We have been conversing in a mix of Swedish and Danish with our children, and now, as we gear up for this relocation, we are enthusiastic to embrace our new life in Denmark. Our kids are especially thrilled about moving into a home with a trampoline and being nearer to their grandmother. Nevertheless, they are also dealing with the adjustments that come with a new school and community. #### Continuing Our Collaboration with Green Kitchen Stories
In spite of the major changes, we will maintain our partnership with Green Kitchen Stories (GKS). Luise will be concentrating on her studies, but we have plenty of exciting endeavors lined up. We are in the process of creating a new set of tattoos, and I am continuing to develop Green Kitchen Studios, our production company. Moreover, we are excited to share that we are working on a new book set to launch next Spring, although we are keeping the title secret for the time being.

#### The Cake Recipe
Now, onto the main attraction—the cake! This scrumptious recipe is inspired by a polenta cake from our book, [Green Kitchen Travels](https://www.amazon.co.uk/Green-Kitchen-Travels-vegetarian-adventures/dp/1742707688), but we’ve made several modifications to increase its moisture and transform it into an upside-down delight topped with lovely lemon slices and a rich lemon honey syrup.
This cake is an ideal blend of an Italian cheesecake and a tender crumb cake, showcasing the distinctive flavors and textures of polenta and poppy seeds. Remarkably, it is moist yet light, naturally gluten-free, and sweetened exclusively with honey, which imparts delightful floral undertones. The inclusion of ricotta cheese enhances the flavor, making the cake even more scrumptious after a day in the refrigerator.
