### Thrilling Life Transitions and a Delectable Cake Recipe

As we begin a fresh chapter in our lives, we wanted to share some important news with you. We are relocating to Denmark! Luise has chosen to follow her lifelong aspiration of becoming a midwife by enrolling in a midwifery school in Copenhagen. This change marks a crucial moment for our family as we move to a lovely house just outside the city.

The topic of where we should reside and which country we consider home has been a continual discussion in our family, particularly within a dual-nationality relationship. After spending 12 wonderful years in Sweden, we feel prepared for this new adventure in Denmark. We are both excited and a bit anxious about the changes that await us, especially for our children. They are eager about moving into a house with a trampoline and being nearer to their grandmother, yet they are also wrestling with the unknowns of a new school and surroundings. In spite of these transitions, we will maintain our involvement with Green Kitchen Stories (GKS). Luise will dedicate considerable time to her studies while I oversee our ongoing projects. We have some thrilling plans in store, including a new collection of vegetable tattoos and the creation of Green Kitchen Studios, our production company. Now, onto the highlight of this post: the cake! This delightful recipe is inspired by a polenta cake from our book, [Green Kitchen Travels](https://www.amazon.co.uk/Green-Kitchen-Travels-vegetarian-adventures/dp/1742707688), but we have made some tweaks to increase its moisture and turn it into an upside-down cake adorned with gorgeous lemon slices and a rich lemon honey syrup. The result is an ideal blend of an Italian cheesecake and a soft crumb cake, featuring notes of polenta and poppy seeds. Surprisingly, it is very moist yet light, naturally gluten-free, and sweetened only with honey, which contributes delightful floral undertones. The addition of ricotta cheese enhances the flavor, making it even tastier after a day in the refrigerator.
