#### Ingredients
– ¼ cup granulated sugar
– ½ cup packed light brown sugar
– 2 teaspoons cinnamon
– ¼ teaspoon ground ginger
– ¾ teaspoon kosher salt
– 1 egg white
– 1 teaspoon water
– 1 teaspoon vanilla extract
– 3 cups (12 ounces) pecan halves
#### Instructions
1. Preheat the oven to 325°F.
2. Combine the granulated sugar, light brown sugar, cinnamon, ground ginger, and salt in a bowl. In another bowl, beat the egg white, water, and vanilla extract until frothy. Mix the pecans with the egg white mixture using a spatula until evenly coated. Add half of the sugar mixture and mix with a spatula until thoroughly coated, then incorporate the rest of the sugar mixture and stir until coated.
3. Arrange a baking sheet with parchment paper and spread the nuts in a single layer. Bake for 15 minutes, then take the tray out and stir (the nuts will appear foamy now). Continue baking for another 15 minutes until they are lightly browned. Let cool for about 10 minutes before tasting and fully cool (around 45 minutes) before storing. Keep in an airtight container for up to 2 weeks or freeze for up to 2 months.
