- 1 cup rice
- 2 cups water (or beef broth)
- 1 pound ground beef
- 1 small onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons taco seasoning (link)
- 1 tablespoon cornstarch
- 1/2 cup (cool) water (or beef broth)
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup pico de gallo (link)
- 1 cup salsa (link)
- 1/4 cup guacamole (link)
- 1/4 cup sour cream
- 1/2 cup cheddar cheese, shredded

- Combine the rice and water in a medium saucepan, bring to a boil, lower the heat, and simmer with a lid for 18 minutes, then turn off the heat and allow to rest for 5 minutes.
- In the meantime, brown the beef and onion in a large skillet over medium-high heat, crumbling the meat as it cooks, then drain any excess fat.
- Stir in the garlic and taco seasoning, and cook until it becomes aromatic, roughly one minute.
- Mix in the cornstarch dissolved in the water, stir thoroughly, bring to a simmer, and cook until most of the liquid has evaporated, about 3-5 minutes.
- Construct the taco rice bowls and relish!
