Taco-Inspired Rice Bowl

Experience all your beloved taco tastes and toppings presented in a bowl atop a layer of rice rather than in tortillas!

ingredients
    For the rice:
  • 1 cup rice
  • 2 cups water (or beef broth)
  • For the taco-flavored beef:
  • 1 pound ground beef
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons taco seasoning (link)
  • 1 tablespoon cornstarch
  • 1/2 cup (cool) water (or beef broth)
  • For the taco rice bowls:
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup pico de gallo (link)
  • 1 cup salsa (link)
  • 1/4 cup guacamole (link)
  • 1/4 cup sour cream
  • 1/2 cup cheddar cheese, shredded
directions
    For the rice:
  1. Combine the rice and water in a medium saucepan, bring to a boil, lower the heat, and simmer with a lid for 18 minutes, then turn off the heat and allow to rest for 5 minutes.
  2. For the taco-flavored beef:
  3. In the meantime, brown the beef and onion in a large skillet over medium-high heat, crumbling the meat as it cooks, then drain any excess fat.
  4. Stir in the garlic and taco seasoning, and cook until it becomes aromatic, roughly one minute.
  5. Mix in the cornstarch dissolved in the water, stir thoroughly, bring to a simmer, and cook until most of the liquid has evaporated, about 3-5 minutes.
