
Buffalo Chicken Meatloaf

All the delicious flavors of buffalo chicken wings in a simple chicken meatloaf!
ingredients
- 2 pounds ground chicken (or turkey, pork, or beef)
- 1/2 cup shredded zucchini
- 1/2 cup grated onion
- 1/2 cup grated carrot
- 1/2 cup finely diced celery
- 3 cloves garlic, grated/minced
- 2 green onions, sliced thin
- 2 eggs
- 1/2 cup buffalo hot sauce (adjust to taste)
- 1 cup breadcrumbs (gluten-free if needed)
- 1 cup shredded (or cubed) cheddar cheese (optional)
- 1 tablespoon ranch seasoning *
- 1 tablespoon Worcestershire sauce (gluten-free if needed)
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
directions
- Combine all ingredients thoroughly and either transfer to a 9×5 inch loaf pan or shape as desired on/in a baking pan.
- Bake in a preheated oven at 350F/180C until the chicken is cooked through, reaching 165F, approximately 60 minutes.
- Savor!
Note: If opting for beef, you can skip the zucchini since beef tends to be juicier than chicken.
Option: * Use store-bought or create your own with: 1 teaspoon dried parsley, 1 teaspoon dried chives, 1 teaspoon dried dill, 1 teaspoon onion powder, and 1 teaspoon garlic powder.
Option: Encase in, or cover with bacon before baking!
Option: Incorporate 1/2 cup raw chopped bacon into the meat mixture!
Option: Mix in 1/2 cup crumbled blue cheese into the meat mixture!
Option: After baking, glaze the loaf with additional buffalo hot sauce!
