3. Butter the cut side of each bun.
4. Portion the beef into 8 pieces, each 3 ounces, and roll them into balls. Cut an 8-inch square of parchment paper.
5. Preheat a griddle or cast-iron skillet over high heat. A sprinkle of water should sizzle and evaporate when it’s ready.
6. Place the buns on the griddle and toast for 2 to 3 minutes or until golden. Move to a plate.
7. Add the beef and cover with the parchment square. Press down with a burger press or heavy spatula until flattened to ⅛-inch thickness. Remove the parchment paper and repeat with the rest of the patties. Season the tops with half of the seasoning.
8. Cook for 90 seconds. Flip, season, and cook the other side for 60 to 90 seconds.
9. Place cheese on half of the patties. Stack a second patty on each cheese slice, creating 4 stacks of 2 patties.
10. Place the patties on the hamburger buns and add toppings as desired.
